Asparagus, when in season, has this satisfying crunch, almost sweet and very plump. It tasted very different during season. We wanted to utilize this produce as much as we can.
Ingredients:
-1 pound asparagus, woody stems removed
-1/4 cup of peanut/sesame/tahini sauce
-1/4 cup of soy sauce
-1 tb rice vinegar
-Honey Sesame Nuts+Nuts or Honey Cashews (needs to be sweet)
-Salt & pepper to taste
-Toasted black sesame seeds
How to make it:
-Cook asparagus until tender-crisp.
-For the sauce, mix tahini, soy sauce, and rice vinegar.
-Place cooked asparagus on a plate and pour the sauce.
-Sprinkle with black sesame.
-Topped with Honey Sesame cashews for extra crunch.
