Pomelo Salad with Chili Lime Cashews

This Pomelo Salad is inspired by the classic Thai dish, Yum Som-O. It's bursting with flavor-sweet, tangy, salty, and just the right amount of heat from our Chili Lime Cashews.

Ingredients:

1 pomelo, peeled and segmented

1 small shallot, thinly sliced

1-2 bird's eye chilies, thinly sliced.

2 tbsp lime juice

1 tsp fish sauce

1 tsp palm sugar or brown sugar

3 cups of salad greens

A handful of cut tomatoes

A handful of chopped cilantro

1 tbsp fried shallots for garnish

A handful of Nuts+Nuts Chili Lime Cashews

-In a bowl, whisk together lime juice, fish sauce, and palm sugar until fully dissolved.

-In a large mixing bowl, combine salad greens, pomelo segments, tomatoes, cilantro, shallots and chili. 

-Pour the dressing over the salad and toss gently to combine.

-Top with Chili Lime Cashews and a sprinkle of fried shallots.
